Beets and Oats Kootu

We all know the goodness of Beet and Oats but ever thought about mixing them.  Well, I didnt till I stumbled upon Priya's Blog.  She gives this easy dish, without even sweating to cut onions and tomatoes.  This has just the right combination of mild aromatic spice and full of nutrition.  Do check her space for more easy yet tasty recipes.  I have always been in awe when she mixes two ingredients to create something yummy (on her own.. without any recipe book).. she is creative and spontaneous. I tried Mango Kesari from her blog and has been hooked ever since.  Just the name made me try it and it was very good.  I might have missed the Tried and Tasted event which featured her blog this month, but I am quite early for Nupur's Blog bites.

Update 15-Dec-10: I guess my entry is not valid for Nupur's Blog bites.  No worries.. I will send another entry to her event abiding all the rules.

Again I have to mention about this event.  This is also a similar event to Tried and Tasted, except you can try recipes at random or the bookmarked ones.  The main purpose of these events are to give appreciate and give credit to our fellow bloggers.  I cannot imagine the amount of exposure these events bring us.  It is quite sure we cannot visit every blogger out there but sure these events bring out Fabulous, Fantastic blogs with hundreds of treasures of recipes.  I wouldn't have known Hooked on Heat or Closet cooking or Tasty palettes or woulnt have worked my lazy bones to cook Whole Moong Dhal Idly or Gobi 65.  Coming to the recipe, I take pleasure noting it down in my space.  Thanks Priya, my hubby and kid loved it.




Ingredients

  • Beets - 2 cups, chopped
  • Yellow Moong Dhal - 1/2 cup
  • Mustard seeds - 1/4 tsp
  • Cumin seeds - 1/4 tsp
  • Fennel seeds - 1/4 tsp
  • Urad Dhal - 1/2 tsp
  • Asafoetida pwd - 1/4 tsp
  • Curry leaves - 1 sprig
  • Salt to taste
For Grinding
  • Coriander Seeds - 1 tbsp
  • Rolled Oats - 2 tbsp
  • Fenugreek seeds - 1/2 tbsp
  • Dry red chillies - 4
Method

As per Priya's method, you can dry roast the Grinding ingredients.  But I roasted them in a teaspoon of Ghee.  It bought a very nice aroma to the dish.  Powder to a coarse powder and keep aside.  Pressure cook the chopped Beets and Dhal with enough water, till you can smash them good.  When the pressure releases, add the ground powder and allow it to boil.  Loosen the consistency with required amount of water if needed.  In a seperate pan, add oil.  When hot, tear and add the dry red chillies and sputter the mustard seeds, cumin seeds and fennel seeds.  Add Asafoetida pwd and the Urad Dhal.  Also add curry leaves to this.  Transfer it to the boiling kootu.  Mix well. Turn off the stove and serve hot
